Boysenberry Fool Recipe

  1. Set aside 20 of the best boysenberries for garnish.
  2. Place boysenberries, water and sugar in a saucepan, cook till they are soft then puree.
  3. Allow to cold.
  4. Whip cream and fold into custard with boysenberry puree.
  5. Ladle into serving glasses and chill.
  6. To serve, decorate with a rosette of whipped cream and garnish with reserved boysenberries and a sprig of mint.
