Boysenberry Fool Recipe
- 600 gm boysenberries, fresh
- 1/4 c. water
- 1/2 c. sugar (caster)
- 1 c. vanilla custard
- 1 c. cream mint for garnish
- Set aside 20 of the best boysenberries for garnish.
- Place boysenberries, water and sugar in a saucepan, cook till they are soft then puree.
- Allow to cold.
- Whip cream and fold into custard with boysenberry puree.
- Ladle into serving glasses and chill.
- To serve, decorate with a rosette of whipped cream and garnish with reserved boysenberries and a sprig of mint.
