Creamy Red Potato Salad
- 2 tablespoons sliced green olives with pimento
- 2 teaspoons capers
- 1 rib celery, finely chopped
- 1/4 cup finely chopped red onion
- 3 tablespoons mayonnaise
- 1 teaspoon apple cider vinegar
- 1 teaspoon lemon herb seasoning (recommended: McCormick)
- 2 tablespoons freshly chopped parsley leaves
- 3 hard boiled eggs, chopped
- 1 (16-ounce) bag pre-cooked and diced red potatoes (recommended: Reser's)
- Combine all ingredients in a large bowl.
- Stir to combine.
- Serve immediately.
