Currin's Spaghetti Squash Incident
- 1 small onion
- 3 tbsp garlic, minced
- 3 oz sliced black olives
- 1 15oz can plain tomato sauce
- 1 15oz can Traditional low sodium Italian seasoned tomato sauce
- 3 Tbsp's oregano
- 2 Tbsp's thyme
- 1 tbsp Italian seasoning
- 1 dash salt
- 1 tsp black pepper
- 1 large spaghetti squash
- Place whole spaghetti squash in microwave and cook for one minute.
- Remove and cut in half lengthwise.
- Remove all seeds and membranes.
- Place squash cut side down in a 13x9 casserole dish.
- Add 1 1/2 Cups water.
- Bake 30 minutes at 350F Fahrenheit.
- Meanwhile, saute onion for 5 minutes.
- Add garlic and saute another minute.
- Transfer onion mix into a pot.
- Add all seasonings, salt and pepper.
- Stir.
- Add the tomato sauces.
- Mix.
- Bring to a boil, then lower heat to low or medium low.
- Simmer 30 minutes, stirring occasionally.
- Test squash tenderness with a fork.
- Should be al dente.
- Once done, remove from casserole.
- With fork, scrape squash to create "spaghetti strands."
- Serve in large bowls.
- Top with sauce.
