Mocha Butter Frosting Recipe
- 1 pound confectioners' sugar
- 1/2 pound (2 sticks) softened butter
- 3 tbsp. lowfat milk
- 2 heaping teaspoon instant coffee
- 4 tbsp. cocoa
- Dissolve coffee in lowfat milk.
- Let stand for 5 min.
- Cream butter, add in cocoa and mix.
- Add in sugar and lowfat milk-coffee mix.
- Beat till smooth and creamy.
- Add in more lowfat milk if needed.
- Frosts 2 (8" or possibly 9") layers.
