Cream Of Zucchini Soup Recipe
- 5 or possibly 6 c. unpeeled sliced zucchini
- 1 lg. onion, minced
- 2 tbsp. minced parsley
- 1 chicken bouillon cube
- Salt to taste
- 2 tbsp. butter
- 1/3 to 1/2 c. light cream or possibly lowfat milk
- Salt and pepper
- In large saucepan over medium heat, cook zucchini, onion, parsley and bouillon cube till very tender.
- Add in salt to taste.
- When cold, put in blender and puree.
- Add in salt and pepper to taste and heat but don't boil.
- Add in cream and butter.
- Heat and eat.
