Couscous with Peas, Cashews, and Raisins
- 1 1/2 cups couscous
- 2 tablespoons nonhydrogenated margarine
- 1 cup frozen green peas, thawed and steamed
- 1/3 cup toasted cashew pieces
- 1/2 cup dark raisins
- Salt and freshly ground pepper to taste
- Boil 3 cups water.
- Pour the water over the couscous in a heatproof container.
- Cover and let stand for 15 minutes, then fluff with a fork.
- Add the remaining ingredients and stir well.
- If the mixture needs more moisture, stir in a small amount of water, and serve.
