Chicken Wings with Tomato and Asparagus

  1. Cut off the hard part of asparagus and cut them half.
  2. Quarter the red peppers and chop the tomatoes.
  3. Pierce the surface of the chicken with a fork and season with salt and pepper.
  4. Let sit for a while.
  5. Heat olive oil in a frying pan then put in the chicken, asparagus, and red pepper in that order.
  6. Cook for 5 minutes on medium heat.
  7. When one side has browned, turn the chicken over.
  8. Add the tomatoes, sliced olives and chopped anchovy.
  9. Mix lightly.
  10. Pour on plenty of balsamic vinegar and cover with the lid.
  11. Cook for more than 10 minutes until the chicken has cooked through.
  12. Season with salt and pepper if required.
