Tortillas A La Maison Recipe
- 2 c. cubed cooked chicken or possibly turkey
- 1 tbsp. veg. oil
- 1/2 c. minced celery (I omit)
- 1/2 c. minced onion
- 1/2 c. minced cilantro or possibly parsley (I omit)
- 1 (2 ounce.) jar diced pimento, liquid removed (I omit)
- 1 teaspoon lemon juice
- 1 c. mayonnaise (no fat works fine)
- 1/2 teaspoon each grnd cumin, paprika & black pepper
- 2 cloves garlic, chopped or possibly 1/4 teaspoon garlic pwdr
- 8 flour tortillas
- 1 can sliced mushrooms, liquid removed
- Cheese Sauce
- 1 can condensed cream of chicken soup
- Water
- 1/4 teaspoon each grnd cumin, paprika & garlic pwdr
- Preheat oven to 350 degrees while you cut up chicken and chop vegetables.
- Heat oil in skillet; add in chicken, onion and celery and cook 3-5 min, stirring from time to time till onion starts to become transparent and celery softens slightly.
- Remove from heat.
- Add in cilantro, pimento, lemon juice, mayonnaise, cumin, paprika, pepper and garlic; stir.
- Place about 1/3 c. chicken mix on each tortilla and roll up, cigar-fashion; place rolled tortillas flap-side-down in lightly buttered rectangular baking dish.
- Prepare sauce and pour over tortillas.
- Bake at 350 degrees for 20 min.
- About 5 min before removing from oven, place mushrooms on top.
- Cheese Sauce: Empty contents of soup can into same pan in that you cooked chicken mix.
- (You do not have to wash it in between; any leftover bits of the the chicken mix will actually enhance the sauce.)
- Don't dilute soup according to directions on can.
- Stir cool condensed soup vigorously till smooth.
- Add in 1/2 can water (this will be a little less than 1 c.); stir till smooth.
- Heat till barely simmering.
- Add in chees and spices; stir till cheese melts.
- Pour over filled tortillas and bake as directed above.
- (I put my mushrooms under the sauce.)
- Serves 4 people with 2 tortillas each.
