Curried Onion Bake
- 4 tablespoons butter
- 2 cups coarsely crumbled soda crackers
- 1 12 teaspoons curry powder
- 14 cup vegetable broth
- 2 large onions, coarsely chopped
- 2 cups milk
- 1 egg
- 12 teaspoon salt
- 14 teaspoon pepper
- 34 cup shredded cheddar cheese
- 1 teaspoon paprika
- Melt 2 tablespoons of the butter in a medium microwave safe bowl.
- Add soda crackers, curry powder, and broth.
- Blend well.
- Set aside.
- In a large frying pan, melt remaining 2 tablespoons butter over medium heat.
- Add onions, cover, and cook, stirring occasionally until golden, 8 to 10 minutes.
- In another bowl, beat milk with egg, salt, and pepper until blended.
- Spread half of cracker mixture over bottom of a greased 8-inch square baking dish.
- Top with onions.
- Sprinkle on cheddar cheese.
- Gently pour milk mixture over all.
- Cover dish evenly with remaining crumbled cracker mixture.
- Sprinkle paprika over top.
- Bake 20 to 25 minutes at 325 degrees, until hot and bubbly.
