Broccoli Cheese Soup Recipe
- 1 1/2 pound fresh broccoli or possibly 2 (10 ounce.) pkg. frzn minced broccoli
- 3 tbsp. butter
- 1/4 c. minced onion
- 3 tbsp. flour
- 2 c. chicken broth
- 2 c. light cream
- 1 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 c. grated Cheddar cheese
- Wash and chop broccoli.
- Cook in small amount of salted water till tender.
- Heat butter in a heavy saucepan.
- Add in onion and cook till tender.
- Stir in flour.
- Slowly add in broth and cream, stirring constantly.
- Cook and stir till thickened.
- Add in salt, nutmeg and cooked broccoli.
- Just before serving, stir in cheese.
- Serves 6.
