Gombo Aux Crabes - Crab Gumbo
- 14 cup ham, diced
- 12 garlic clove
- 2 cups okra, sliced
- 2 tablespoons butter
- 12 bay leaf
- 18 teaspoon thyme
- 12 teaspoon salt
- 6 peppercorns
- 6 tomatoes, diced (canned is fine)
- 1 cup water, hot
- 12 lb crabmeat, flaked
- cooked rice
- Fry ham, garlic and okra in butter.
- When well coated with butter, but not brown, add next six ingredients.
- Cook 20 minutes, add crab and cook for an additional 15 minutes.
- Serve on mounds of hot rice.
