Grilled Lemony Garlic Salmon
- 4 ounces salmon fillets (1 piece)
- 14 teaspoon lemon salt (or to taste)
- 18 teaspoon black pepper
- 18 teaspoon lemon zest, grated
- 1 teaspoon butter
- 2 garlic cloves, finely chopped
- 18 teaspoon basil, finely chopped
- 18 teaspoon parsley, finely chopped
- 18 teaspoon red chile, finely chopped (optional for a bit of zip)
- 2 lemon wedges
- Gently rub lemon salt on salmon fillet on both sides.
- Set aside to marinade.
- Chop garlic, basil, parsley and chillie.
- Grate lemon zest.
- Combine garlic, pepper, basil, parsley, lemon zest and chillie (if used) in a bowl, mix well.
- Place ingredients on a piece of foil in this order: 1/2 tsp butter, salmon, garlic mixture and other half butter.
- Preheat grill to approximately 400F.
- Wrap fish in foil, seal edges as tightly as possible.
- Place fish on grill folded side down for approximately 5 to 7 minutes.
- Turn foil pack over and open the foil, squeeze juice of 1 lemon wedge.
- Cook for another 3 to 5 minutes.
- Test for doneness with a fork.
- Garnish with lemon wedge and serve.
