Crunchy Cod with Homemade Tartar Sauce

  2. Line a cookie sheet with Reynolds non-stick foil.
  3. Preheat oven to 400F.

  5. Rinse cod and dry with a paper towel.
  6. Season with salt and pepper.

  8. In a small microwavable bowl, add butter and olive oil.
  9. Microwave until butter is melted.
  10. Whisk in Dijon mustard and cayenne.

  12. In a medium size bowl, add panko crumbs.

  14. Using a pastry brush, generously coat each piece of fish with the butter mixture.
  15. Coat fish with panko, pressing crumbs into fish to coat.
  16. Place on prepared cookie sheet.

  18. Bake for 15-18 minutes.
  19. While fish is baking, mix sauce ingredients together in a small bowl.
  20. Serve immediately.
