Chocolate-Banana Ganache with Fruit

  1. Preheat oven to 350F.
  2. Bake whole unpeeled bananas 15 minutes, or until black and soft.
  3. Cut tips and squeeze flesh into bowl of food processor.
  4. Bring coconut milk to a boil in saucepan.
  5. Remove from heat, and stir in chocolate chips.
  6. Let stand 3 minutes, or until chocolate has melted.
  7. Whisk in syrup and vanilla.
  8. Puree chocolate mixture with bananas until smooth.
  9. Divide fruit among 6 bowls, and drizzle with chocolate-banana ganache.
  10. Sprinkle with coconut, if desired, and serve.
