Beer-Batter Onion Rings

  1. Mix the flour, salt, pepper, oil and yolks together.
  2. Gradually whisk in the beer.
  3. Refrigerate the batter 3 1/2 hours to rest before using.
  4. Slice onions, and dip them in the batter.
  5. Deep-fry in 375F (190C) oil until golden brown.
  6. This batter also works well on other vegetables besides onion rings--and it's great on fish, too.
