Brownie Caramel Parfaits
- 12 cup chopped nuts
- 12 cup shredded coconut
- 1 (16 ounce) box brownie mix (8 inch x 8 inch)
- 2 -3 eggs
- oil
- water
- 1 pint vanilla ice cream
- 1 (12 1/4 ounce) jar caramel ice cream topping
- Place nuts and coconut in an ungreased baking pan.
- Bake at 350 for 10-12 minutes or until toasted, stirring frequently.
- Meanwhile, prepare brownies according to package directions.
- Cool; cut into small squares.
- When ready to serve, layer the brownies, ice cream, caramel topping and nut mixture in parfait or dessert glasses; repeat layers one or two times.
