moist coffee cake
- 1 1/2 cup flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 egg
- 3/4 cup sugar
- 1/3 cup melted butter
- 1/2 cup milk
- 1 tsp vanilla
- 1/2 cup brown sugar
- 1/4 cup flour
- 1/4 cup chilled butter
- 1 tsp cinnamon
- preheat oven to 375, grease and flour pan
- In large bowl, beat sugar, butter and vanilla.
- beat in egg until creamy.
- In medium bowl, whisk together flour, baking soda and salt
- Beat in flour mixture and milk with sugar mixture, alternating flour and milk (start and end with flour mix).
- pour half of the batter into the pan.
- whisk brown sugar, flour and cinnamon in a small bowl.
- Cut in butter with pastry blender or 2 knives until mixture is crumbly.
- put half of the topping on the cake in the pan.
- put the rest of the cake batter in the pan and top off with the brown sugar mixture.
- cook for 30 minutes
