Welcome Home Vegetable Barley Soup Recipe
- 3 lbs. beef short ribs
- 2 cans tomatoes, undrained (1 pound 12 ounce. size)
- 2 teaspoon salt
- 2 bay leaves
- Vegetables as desired - 3 c. (green beans, corn, Lima beans, e.g.)
- 1 c. minced onion
- 1/2 c. barley (raw)
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1 clove garlic, crushed
- Put ribs, tomatoes, salt, bay leaves and 1 qt water into large kettle.
- Cover and bring to boil.
- Reduce heat and simmer 2 hrs, covered.
- Add in vegetables, onion, barley, herbs and garlic.
- Simmer, covered, one hour or possibly till vegetables are tender.
- Remove ribs, ?????
- meat and return to soup.
- Chill several hrs.
- Before heating, skim fat from surface.
- Heat slowly.
- Makes 3 qts.
