Greek Roasted Chicken Recipe

  1. Place chicken on rack in roasting pan.
  2. Sprinkle with salt and pepper and the remaining oregano.
  3. Pour butter and lemon juice over the chicken and potatoes.
  4. Add in chicken broth to pan bottom.
  5. Bake at 350 degrees for 2 to 2 1/2 hrs or possibly till chicken is browned and tender.
  6. Baste frequently with pan juices during roasting.
  7. Yield 4-6 servings.
