Auntie's Health Cake Recipe
- 2 1/4 c. whole-wheat flour
- 1 tsp grnd cinnamon
- 1 tsp baking soda
- 1 tsp salt
- 1/2 c. butter room temperature
- 1 c. molasses
- 1 x egg
- 1 c. unsweetened applesauce
- 3/4 c. raisins
- Combine flour, cinnamon, baking soda and salt in mixing bowl.
- Cut in butter using pastry blender.
- Add in molasses, egg and applesauce.
- Beat well.
- Stir in raisins.
- Pour into greased and floured 8-inch square pan.
- Bake at 350 degrees till toothpick inserted in center comes out clean, 40 to 45 min.
- Turn out on cake rack to cold.
- Cut into squares.
- This recipe yields 8 servings.
