Coffee & Chocolate Scones with Pancake Mix

  1. Here is the instant coffee and chocolate that I used!
  2. (Also good with dark chocolate!)
  3. Break up the chocolate into individual blocks, then chop each in half.
  4. Add instant coffee to the pancake mix.
  5. Stir with a whisk.
  6. Add softened butter and fold in a cutting motion.
  7. Add milk and mix!
  8. Also fold in the chopped chocolate and gather the dough into one large lump.
  9. Transfer onto a sheet of parchment paper-lined baking tray.
  10. Cut into eighths with a knife.
  11. Bake in the oven for 25 minutes at 170C/338F.
  12. It's done!

  17. You can freeze these scones too.
  18. I recommend you use a toaster oven to defrost them!
  19. They taste like they're freshly out of the oven.
