Tamale Pie With Cornbread Crust Recipe
- 1 sm. onion, minced
- No-stick cooking spray
- 1 pound grnd sirloin (lean)
- 1 (10 1/2 ounce.) can condensed tomato soup
- 1 (4 ounce.) can mushroom pcs & stems, liquid removed
- 1 tbsp. chili pwdr
- Salt & pepper to taste
- Saute/fry onion in sprayed skillet till tender.
- Add in meat and saute/fry till nicely browned, stirring with fork so which meat is broken up into small bits.
- Drain off any fat.
- Add in remaining ingredients and mix well.
- Turn mix into 8 1/2 inch square baking dish and cover with cornmeal batter made as follows:
- Second list of ingredients above.
- Mix and sift dry ingredients.
- Combine egg and buttermilk; add in to dry ingredients, stirring just till well mixed; stir in oil.
- Spread batter proportionately over meat mix and bake in a warm 400 degree oven about 30 min.
- 1/4 of whole makes a serving which will contain 3 ounces of meat and 2 servings of bread.
