Tamale Pie With Cornbread Crust Recipe

  1. Saute/fry onion in sprayed skillet till tender.
  2. Add in meat and saute/fry till nicely browned, stirring with fork so which meat is broken up into small bits.
  3. Drain off any fat.
  4. Add in remaining ingredients and mix well.
  5. Turn mix into 8 1/2 inch square baking dish and cover with cornmeal batter made as follows:
  6. Second list of ingredients above.
  7. Mix and sift dry ingredients.
  8. Combine egg and buttermilk; add in to dry ingredients, stirring just till well mixed; stir in oil.
  9. Spread batter proportionately over meat mix and bake in a warm 400 degree oven about 30 min.
  10. 1/4 of whole makes a serving which will contain 3 ounces of meat and 2 servings of bread.
