Apple Charlotte Passover Cake

  1. In bowl beat 3 egg yolks, 23 cup sugar, 1 pinch salt.
  2. Stir in 2 cups apples; grated, 13 cup matzo meal, 2 tablespoon lemon rind grated, 1 T. plum brandy.
  3. Fold in 3 egg whites, stiffly beaten, turn into greased 8 inch spring form pan.
  4. Sprinkle with 4 tablespoons pecans.
  5. Bake at 350F (180C).
  6. 35 minutes or until golden brown and firm.
  7. Cool before removing sides of pan.
