Bok Choy With Ginger Vinaigrette Recipe

  1. Separate bok choy leaves and rinse under cool water to clean.
  2. Place in steamer and steam till stalks begin to turn translucent/soft and are soft when pierced.
  3. Combine vinegar, mustard, soy, etc.
  4. and mix well
  5. After bok choy is steamed you have two options:
  6. Chop up piece into bit size pcs while still hot and pour the ginger vinaigrette over.
  7. or possibly Plunge steamed bok choy into cool water to crisp it back up.
  8. Drain and cold.
  9. Then chop and pour ginger vinaigrette over.
  10. Makes 4 - 1 c. servings
