Chilled Cucumber Riesling Soup
- 1 large English cucumber, peeled and seeded
- 12 cup fresh coriander leaves, loosely packed
- 1 small onion, peeled and diced
- 12 cup riesling wine
- 12 cup yoghurt
- 1 teaspoon sea salt
- 14 teaspoon ground cumin
- fresh ground white pepper
- Chop cucumber into one inch chunks.
- Place cucumber chunks into food processor, add corriander and onion.
- Process until very finely and evenly chopped but not pureed.
- In a large bowl, whisk together the wine, yoghurt, salt and cumin.
- Stir in chopped cucumber mixture.
- Season with pepper and chill (3 hours).
