Chilled Cucumber Riesling Soup

  1. Chop cucumber into one inch chunks.
  2. Place cucumber chunks into food processor, add corriander and onion.
  3. Process until very finely and evenly chopped but not pureed.
  4. In a large bowl, whisk together the wine, yoghurt, salt and cumin.
  5. Stir in chopped cucumber mixture.
  6. Season with pepper and chill (3 hours).
