I can't believe it's not potato salad
- 1 large head of cauliflower chopped
- 1 1/2 cup fat free (ff) may
- 1/2 ff sour cream
- 3 tbsp dijonnaise
- 1/2 envelope of dry ranch dressing
- 2 tbsp ff liquid creamer
- 6 hard boiled egg whites chopped
- 2 celery stalks and/or dill pickles diced
- 1 cup diced onion
- 3 tbsp vinegar (or pickle juice, that's what I used)
- 2 tbsp each dill and parsley
- microwave caulilflower with 1/3c of water 6-8 minutes, until soft,
- drain when cool enough to handle, put 2cups of caulilflower into blender or food processor with mayo thru dry ranch dressing.
- blend.

- dressing will not be completely smooth.
- combine rest of ingredients with cooked caulilflower then add blended dressing, chill
head of cauliflower, sour cream, dijonnaise, dressing, liquid creamer, egg whites, celery, onion, vinegar, dill
