Roasted Spiced Cauliflower with Tomatoes
- 7 cups cauliflower florets
- 3 each italian plum (roma) tomatoes chopped
- 3 1/2 tablespoons olive oil or other vegetable oil
- 4 cloves garlic minced, or to taste
- 1 3/4 teaspoons cumin seeds or to your own taste
- 1/4 teaspoon turmeric
- 18 teaspoon cayenne pepper or to taste
- 1 x salt or to taste
- 1 x black pepper freshly ground, to taste
- 1 x lemon juice fresh, to taste
- 1 x cilantro freshly chopped
- Preheat oven to 450 F degree.
- Add cauliflower florets and plum tomatoes with olive oil, garlic, cumin seeds, turmeric, cayenne, salt, and pepper in a large bowl, and toss until evenly coated.
- Spread cauliflower florets evenly on a baking sheet.
- Roast about 25 to 28 minutes.
- Drizzle with lemon juice and sprinkle with chopped cilantro.
- Serve warm.
