Bacon Wrapped Pineapple Shrimp
- 12 jumbo shrimp, deveined
- 14 fresh pineapple, cut into bite sized chunks drained or pineapple chunks in juice, drained
- 6 slices center-cut bacon, cut in 1/2 crosswise
- 12 wooden toothpicks
- dry rub seasonings
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon garlic salt
- 12 tablespoon black pepper
- 2 tablespoons brown sugar
- Holding a shrimp, nest a chunk of pineapple in the natural curve of the shrimp then wrap bacon around the shrimp and pineapple and secure with a wooden toothpick.
- Wrap and secure all 12 shrimp.
- In a 1 gal plastic food bag place shrimp and olive oil, toss to coat, sprinkle enough rub to lightly coat the shrimp.
- (The bag should look dark red.)
- Refrigerate for 1-4 hours.
- Remove shrimp from bag and immediately place shrimp on greased grill for 2-3 minutes, turn and cook an additional 2-3 minutes or add to a hot skillet and cook 3 minutes on each side or until bacon is crisp and shrimp are opaque and firm.
- Serve hot.
