Bacon Wrapped Pineapple Shrimp

  1. Holding a shrimp, nest a chunk of pineapple in the natural curve of the shrimp then wrap bacon around the shrimp and pineapple and secure with a wooden toothpick.
  2. Wrap and secure all 12 shrimp.
  3. In a 1 gal plastic food bag place shrimp and olive oil, toss to coat, sprinkle enough rub to lightly coat the shrimp.
  4. (The bag should look dark red.)
  5. Refrigerate for 1-4 hours.
  6. Remove shrimp from bag and immediately place shrimp on greased grill for 2-3 minutes, turn and cook an additional 2-3 minutes or add to a hot skillet and cook 3 minutes on each side or until bacon is crisp and shrimp are opaque and firm.
  7. Serve hot.
