Chili With Vegetables Recipe
- 1 tbsp. vegetable oil
- 1/2 c. minced onion
- 1/4 teaspoon chopped garlic
- 1 pound grnd beef
- 1 can (16 ounce.) tomatoes, broken up
- 1 1/2 tbsp. chili pwdr
- 3/4 teaspoon salt
- 1/2 c. sliced carrot
- 1/2 c. sliced celery
- 1/2 c. diced green pepper
- 1 can (20 ounce.) Progresso red kidney beans
- In medium saucepot heat oil till warm.
- Add in onion and garlic; saute/fry till tender, about 5 min.
- Add in beef; cook and stir till browned and crumbled; drain excess fat.
- Add in tomatoes, chili pwdr and salt.
- Simmer, covered, for 40 min.
- Add in vegetables.
- Simmer, covered, till vegetables are tender, about 15 min.
- Add in Progresso red kidney beans (undrained).
- Simmer, covered, till beans are warm, about 2 min.
- Yield: 4 portions.
