Smoky Chipotle Chili Con Queso Mac
- 1 1/2 pounds ground beef sirloin for the chicken Ground chipotle powder for the chili powder
- 2 1/2 cups shredded smoked Cheddar for the regular Cheddar
- 1 14-ounce can diced fire-roasted tomatoes (such as Muir Glen brand), drained
- 4 scallions, chopped, for garnish
- Brown the beef, seasoned as you would the chicken in the master recipe, #153, swapping the chipotle powder for the chili powder.
- Continue with the recipe, swapping the smoked Cheddar for the Cheddar.
- Stir the tomatoes into the cheese sauce once the cheese has melted.
- Garnish bowlfuls of chili con queso mac with chopped scallions.
