White Bean Fennel Soup
- 1 tablespoon olive oil
- 1 large onion, chopped
- 1 fennel bulb, sliced
- 5 cups chicken broth
- 1 (15 ounce) can white beans, drained and rinsed
- 1 (14 ounce) can tomatoes
- 1 teaspoon dried thyme
- 14 teaspoon pepper
- 1 bay leaf
- 3 cups chopped fresh spinach
- Saute onions and fennel in garlic.
- Combine all ingredients except spinach in slow cooker.
- Cover and cook on low 2-3 hours.
- Remove bay leaf and add spinach.
