Chicken Simon and Garfunkel

  1. Flatten chicken breasts between sheets of waxed paper.
  2. Spread each breast with 1 teaspoon butter and sprinkle with salt and pepper.
  3. Place 1 slice of cheese on each piece of chicken, then roll and tuck ends, fastening with toothpicks if necessary.
  4. Coat lightly with flour.
  5. Dip in egg.
  6. Roll in bread crumbs and arrange in a baking dish.
  7. Melt remaining butter and add parsley, sage, rosemary and thyme.
  8. Pour butter mixture over chicken.
  9. Bake, uncovered, 30 minutes at 350F.
  10. Pour wine over chicken and baste with butter drippings; bake 20-30 minutes longer.
  11. Remove toothpicks and serve.
