Chicken Fried Rice

  1. Advanced prep.
  2. Cook chicken night before.
  3. Cut into 1/2 inch pieces.
  4. Cook the rice night before.
  5. Store separate in fridge.
  6. Chop onions and red bell pepper.
  7. Mince ginger root and garlic.
  8. Slice zucchini into 1/2 inch pieces.
  9. Remove strings from snow peas and cut into 1 inch pieces.
  10. Preparation.
  11. Cook onions, ginger, pepper flakes and garlic in 1 1/2 tbs sesame oil.
  12. Cook over medium high heat for 2 minutes.
  13. Add zucchini, bell pepper and snow peas.
  14. Cook, stirring frequently 3-4 moniutes or until vegetables are just softened.
  15. In separate pan, scramble eggs.
  16. Stir eggs, chicken and veggie mixture into rice.
  17. Stir in soy sauce.
  18. Put into labeled freezer bag/tupperware, seal and freeze.
  19. To serve.
  20. Thaw.
  21. Heat in medium hot skillet with 2 tsp of oil.
  22. Cook, stirring constantly, 5 minutes or until heated through.
