Bean Thread Noodles With Beef And Asian Pear Recipe

  1. Soak noodles in a bowl of cool water till pliable, about 15 min, and drain.
  2. Cut into 2-inch lengths.
  3. While noodles are soaking, stir together garlic, soy sauce, sugar, sesame oil, red pepper flakes, and 1/2 c. vinegar.
  4. Add in beef and marinate at room temperature, stirring occasionally, 15 min.
  5. Bring broth and water to a boil.
  6. Add in beef and marinade and cook 2 min.
  7. Stir in noodles and cook till just tender, about 2 min.
  8. Toss pear and scallions with remaining tsp.
  9. vinegar.
  10. Spoon noodles and broth into bowls and top with pear and scallions.
  11. Makes 4 servings.
