Irish Coffee Dessert Cake

  1. Cream butter and 1-1/4 cups (300 ml) sugar together until light and fluffy.
  2. Add the vanilla during the creaming.
  3. Combine the flour, baking powder, coffee and salt.
  4. Add to the butter mixture alternately with the milk.
  5. Beat the egg whites until soft peaks form.
  6. Fold in remaining 1/4 cup (60 ml) sugar.
  7. Beat to a meringue consistency.
  8. Fold into cake batter.
  9. Pour into two 9-inch cake pans, lightly greased on bottoms only.
  10. Bake in a 350 degree (175 C.) oven for 25 minutes.
  11. Cool 10 minutes on a wire rack; loosen edges around cakes and remove from pans.
  12. Cool completely.
  13. Whip cream.
  14. Add powdered sugar.
  15. Fold in vanilla and whiskey.
  16. Fill and frost cake.
  17. Decorate with shaved chocolate.
