Family Casserole
- 1 lb. hamburger, cooked, drained and crumbled
- 1 medium onion, halved and sliced
- 1/2 tsp. minced garlic
- 2 potatoes, peeled, sliced very thin
- 2 carrots, peeled, sliced very thin
- 1 c. grated cheddar cheese
- 1 can cream of chicken soup
- 1/2 soup can of water
- 2 c. biscuit mix
- milk and water
- Preheat oven to 350u0b0.
- In a saucepan, combine beef, onion, garlic and 1/4 cup water; cook until onions are tender.
- Spread half of potatoes in a 3 quart casserole.
- Top with half of meat mixture, then carrots, then cheese, then remaining meat mixture. Mix soup with 1/2 soup can of water; pour over casserole and top with remaining potatoes.
- Bake, uncovered at 350u0b0 for approximately 1 hour.
- When potatoes are fork tender, combine biscuit mix with enough milk to make a thin consistency; pour over casserole.
- Bake 5 to 10 minutes longer or until dough is lightly browned.
- Yield: 6 servings.
