Broccoli Cheese Soup
- 12 cup onion, chopped
- 14 cup flour
- 2 cups fat free chicken broth
- 1 12 lbs broccoli
- 1 cup carrot
- 14 teaspoon nutmeg
- 14 teaspoon salt
- 14 teaspoon black pepper
- 14 teaspoon Pam cooking spray
- 2 cups milk
- 14 cup unsalted butter
- 6 ounces cheddar cheese
- Saute onion in PAM, set aside.
- Cook melted butter and flour using a whisk over medium heat for 3-5 minutes.
- Stir constantly and add milk.
- Add Chicken broth, simmer for 20 minutes.
- Add broccoli, carrots, onions.
- Cooker over low heat 20-25 minute (I used the pressure cooker for 10 min.

- Add salt and pepper.
- Puree in blender.
- Return to heat, add cheese and nutmeg.
