Mother's Liver Dumplings Recipe
- 1 pound calves liver
- 1 1/2 tbsp. suet
- 1/2 tbsp. pork fat
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 c. cracker crumbs
- 2 Large eggs
- 1 teaspoon minced parsley
- Dash marjoram
- 1/8 teaspoon nutmeg
- 1 minced onion
- 2/3 c. flour (approx.)
- Wipe liver and put through food chopper with suet.
- Add in salt and pepper.
- Add in cracker crumbs, well beaten Large eggs, parsley, marjoram, nutmeg, onion that has been browned in fat and sufficient to hold mix together.
- Drop by spoonfuls into boiling salted water or possibly soup stock.
- Cook 10 min with cover off.
- Cover and cook 10 min longer.
