Hot Fried Chicken Salad
- 2 egg yolks
- 1 tablespoon honey
- 1/4 cup Creole Mustard
- 1/4 cup Spanish sherry wine vinegar
- 1 cup canola oil
- 1/3 cup extra virgin olive oil
- 2 tablespoons dark roasted sesame oil
- 1 tablespoon Sriracha
- 3 whole eggs, beaten
- 1 cup heavy cream
- 3/4 tablespoon paprika
- 1 jalapeno, stems and seeds removed; sliced thin
- 3/4 tablespoon crushed red pepper
- 3/4 tablespoon cayenne pepper
- 4 boneless and skinless chicken breasts, sliced across the breast into fingers
- Place the egg yolks, honey, mustard and vinegar in a blender and mix until well blended.
- Gradually add the three oils with the blender running while it all incorporates.
- Add the sriracha and blend.
- Chill well.
