Crusty Dill-Garlic Salmon
- 2 tablespoons lemon juice
- 2 tablespoons dry white wine
- 1 12 tablespoons olive oil
- 2 (6 ounce) salmon fillets
- 12 cup breadcrumbs
- 14 teaspoon garlic salt
- 14 teaspoon dill weed
- 18 teaspoon cayenne pepper
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Combine lemon juice, wine, olive oil and salmon fillets in a large ziploc bag; seal bag and marinate in refrigerator for 1 hour, turning occasionally.
- Remove salmon fillets from bag and discard marinade; place fillets in a lightly oiled baking dish; toss bread crumbs, spices, olive oil, and lemon juice together in a small bowl; spread crumb mixture evenly over top and sides of salmon, pressing lightly to hold crumbs in place.
- Bake at 400 for 12 minutes or until fish flakes easily when tested with a fork.
