Butter-Bean Spread
- 16 ounces lima beans drained and rinsed
- 1 each scallions, spring or green onions sliced
- 1 small garlic cloves chopped
- 1/2 cup yogurt, non-fat plain
- 1/4 cup parmesan, parmigiano-reggiano cheese, grated
- 1 tablespoon olive oil, extra-virgin
- 1 tablespoon red wine vinegar
- 1/2 teaspoon rosemary leaves chopped fresh, or 1/4 teaspoon dried
- 1 teaspoon salt
- 1/4 teaspoon black pepper Freshly ground to taste
- Puree butter beans, scallion, garlic, yogurt, Parmesan, oil, vinegar, rosemary, salt and pepper in a food processor until smooth.
