Italian Zucchini with Mozzarella
- 3 to 4 young zucchini (about 5-inches long)
- 3 tbsp. olive oil
- Italian seasoning
- Garlic pepper
- Salt
- Shredded mozzarella cheese
- Scrub zucchini and remove ends.
- Slice lengthwise about 1/8-inch thick.
- Put olive oil in shallow bowl; add zucchini slices and toss.
- Lay oiled slices on cookie sheet.
- Sprinkle each slice with salt, garlic pepper and Italian seasoning, to taste.
- Turn each slice over and season.
- Put zucchini in middle of preheated 400F oven.
- Bake 10 minutes, until slices are tender.
- Remove from oven and generously sprinkle with shredded mozzarella cheese.
- Return to oven and bake just long enough for cheese to melt and just begin to brown.
- Serve immediately.
