Nadia's Quick Roasted Vegetables

  1. Cut the aubergine and courgette into chunks (with skins).
  2. Deseed and chop the peppers.
  3. Quarter the tomatoes.
  4. Put all the vegetables into a roasting tin and sprinkle with the salt, black pepper and olive oil and mix well.
  5. Roast in the oven on gas mark 6/200C (400F) for about 45-60 minutes, turn once or twice during cooking.
