Coconut Shrimp

  1. Combine coconut, chiles, garlic, cilantro and lime juice in a shallow dish.
  2. Marinate shrimp in mixture for 1/2 hour.
  3. Season with salt and pepper and grill about 3 minutes on each side, or until just cooked through.
