Rachael Ray's Strawberry Misu

  1. In a medium bowl, whip 1/2 cup of the heavy cream to soft peaks with an electric mixer.
  2. In a large bowl, combine the remaining heavy cream, mascarpone and confectioners sugar.
  3. (The cream will loosen the mascarpone, making it easier to mix.)
  4. Using a rubber spatula, fold the whipped cream into the mascarpone mixture.
  5. In a blender, combine strawberries and water until you have a smoothie-like texture.
  6. Set aside until ready to assemble.
  7. Layer the bottom of a square baking dish with ladyfingers (you may have to break some in half to make them fit).
  8. Ladle half of the strawberry puree over the cookies.
  9. Top with half of the mascarpone mixture.
  10. Add another layer of ladyfingers and ladle the remaining strawberry puree over them.
  11. Add the rest of the mascarpone mixture and dust with cocoa powder.
