Carol's Lemon Mousse
- 1 (1/4 ounce) envelope unflavored gelatin
- 3 tablespoons cold water
- 2 eggs, separated
- 4 tablespoons sugar
- 2 tablespoons fresh lemon juice
- 12 tablespoon lemon rind, grated
- 1 13 cups whipping cream
- Dissole gelatin in water.
- Let stand 5 minutes.
- Beat egg yolks and sugar until light and fluffy.
- Add lemon juice and grated lemon rind.
- Blend carefully.
- Melt gelatin/water mixture over low heat.
- Add to egg mixture., stirring well.
- Whip cream, fold into egg mixture.
- Beat egg whites until stiff peaks form.
- Fold into egg mixture.
- Pour mousse into 4 serving bowls.
- Chill for 2 1/2 hours.
