Carol's Lemon Mousse

  1. Dissole gelatin in water.
  2. Let stand 5 minutes.
  3. Beat egg yolks and sugar until light and fluffy.
  4. Add lemon juice and grated lemon rind.
  5. Blend carefully.
  6. Melt gelatin/water mixture over low heat.
  7. Add to egg mixture., stirring well.
  8. Whip cream, fold into egg mixture.
  9. Beat egg whites until stiff peaks form.
  10. Fold into egg mixture.
  11. Pour mousse into 4 serving bowls.
  12. Chill for 2 1/2 hours.
