Sig's Cucumber and Melon Cooler

  1. Cut the melon into half short way across to make a round bowl when empy.
  2. Scoop out he flesh and set the empty halves aside
  3. Cut the cucumber and scooped out melon into small chunks, remove seeds from cucumber and melon if you like
  4. Now mix all the other ingredients one after the other in a separate bowl to make a dressing
  5. Chop and add the mint if using gently fold into the cucumber and the melon.
  6. Add the dressing and again fold under gently .
  7. Cut the cheese into small cubes and sprinkle over top if you are using it
  8. Chill for 10 to 15 minutes
  9. Serve in set aside empty melon shell, this makes four small servings.
