Sig's Cucumber and Melon Cooler
- 1 small to medium Mellon of choice
- 1 small salad cucumber
- 150 grams Blue cheese or feta , Stilton or gorgonzola (cheese is optional)
- 2 1/2 tbsp olive oil, extra virgin
- 3 to 4 tablespoons of runny honey
- 3 to 4 tablespoons creme fraiche
- 2 tbsp balsamic vinegar ( white or red )
- 1 tsp of a hot spicey sauce like Harissa, Peri Peri or similar
- 1 pinch of salt (salt substitute )if not using the cheese
- 1 pinch of freshly cracked black pepper
- 6 small fresh leaves of mint (optional)
- Cut the melon into half short way across to make a round bowl when empy.
- Scoop out he flesh and set the empty halves aside
- Cut the cucumber and scooped out melon into small chunks, remove seeds from cucumber and melon if you like
- Now mix all the other ingredients one after the other in a separate bowl to make a dressing
- Chop and add the mint if using gently fold into the cucumber and the melon.
- Add the dressing and again fold under gently .
- Cut the cheese into small cubes and sprinkle over top if you are using it
- Chill for 10 to 15 minutes
- Serve in set aside empty melon shell, this makes four small servings.
