Brocoli Quiche Recipe

  1. Line a 230mm flan dish with the shortcrust pastry.
  2. Cook the broccoli in a small amount of boiling salted water till crisp and still bright green.
  3. Drain.
  4. Spread the ketchup over the base of the pastry case.
  5. Scatter the liquid removed broccoli florets over the ketchup.
  6. Beat together the Large eggs lowfat milk salt and pepper and half the grated cheese and pour over the broccoli.
  7. Sprinkle on the remaining cheese.
  8. Bake on the floor of the roasting ovenfor 30 min till the quiche is golden and set.
  9. I found this recipe persuaded my children to eat green vegetables because of the thin layer of tomato ketchup in the base.
  10. Serves 6
