Tangy Cucumber and Tomato Salad
- 10 each seedless cucumbers, peeled
- 30 each plum tomatoes
- 1-1/4 qt. Red onions, halved, thinly sliced King Sooper's 1 lb For $0.99 thru 02/09
- 1-1/4 qt. BACK TO NATURE Organic Balsamic Vinaigrette
- to taste salt
- to taste black pepper
- Cut cucumbers in half lengthwise.
- Scoop out insides; discard.
- Cut cucumber halves diagonally into 1/2-inch-thick slices.
- Place in large bowl.
- Cut tomatoes in half; remove seeds.
- Cut each half into two wedges.
- Add to cucumbers along with the onions and vinaigrette; toss to coat.
- Season with salt and pepper; cover.
- Refrigerate several hours or until chilled.
