Tangy Cucumber and Tomato Salad

  1. Cut cucumbers in half lengthwise.
  2. Scoop out insides; discard.
  3. Cut cucumber halves diagonally into 1/2-inch-thick slices.
  4. Place in large bowl.
  5. Cut tomatoes in half; remove seeds.
  6. Cut each half into two wedges.
  7. Add to cucumbers along with the onions and vinaigrette; toss to coat.
  8. Season with salt and pepper; cover.
  9. Refrigerate several hours or until chilled.
