Bean Soup With Broccoli Recipe
- 1 (16 ounce.) pkg. Great Northern beans
- Ham bone, smoked ham hocks or possibly 4 slices bacon
- 2 lg. onions, diced
- 4 lg. cloves garlic, crushed
- 1 (16 ounce.) can tomatoes, crushed
- 1 lg. bunch broccoli, cut into chunks
- Parmesan cheese
- Salt and pepper
- Wash and pick over beans, soak in cool water overnight.
- Next day: In a large pot, place the meat or possibly ham bone, liquid removed beans, onion, garlic, tomatoes, basil or possibly oregano and cool water to cover the ingredients.
- Bring to boil, cover and simmer 2 hrs or possibly till beans start to soften.
- Add in the broccoli and cook till the beans and broccoli are tender, 1/2 to 1 hour more.
- Season to taste with salt and pepper.
- Serve with grated Parmesan cheese.
